Spelt
Spelt is an ancient form of wheat, sometimes called ‘Roman wheat.’ It is well digested by many who cannot tolerate modern forms of wheat. It is rich in protein, amino acids and B vitamins, high in fibre, less acidic and lower in gluten than conventional wheat. Spelt comes in the form of cracked grain, pasta, flakes and flours. This recipe uses cracked grain spelt which can be found in most grocery stores or from your favorite health food supplier.
The other main ingredient for this savory starter is sprouts, the options are endless and each offer a different taste experience. Here are few suggestions that are big on benefits & bold in flavor.
Adzuki
Adzuki Bean Sprouting Seeds have a distinctive sweet, nutty flavor.
Alfalfa
Alfalfa is a sweet tasting sprout from North Africa and is high in protein, chlorophyll, calcium, potassium, vitamin A, and vitamin K. Best eaten when the root is 1½ inches long and begins to develop tiny green leaves.
